Vanilla Almond Milk Crepes

Ingredients
1 Cup Flour
1 Tablespoon White Sugar
1/4 Teaspoon Salt
1 Teaspoon Vanilla Extract
3 Eggs
2 Cups Unsweetened Almond Milk
2 Tablespoons Butter, Melted


Directions
1. Sift together flour, sugar and salt; set aside. In a large bowl, beat eggs, vanilla extract, and almond milk together with an electric mixer. Beat in flour mixture until smooth; stir in melted butter.

2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 2 tablespoons for each crepe. Tip and rotate pan to spread batter as thinly as possible. Brown on both sides and serve hot.

Optional: After placing each finished crepe on a plate from the pan, sprinkle lightly with more white sugar between each crepe.

I made crepes the other night and used unsweetened almond milk instead of regular milk.

It's amazing how good they came out! I'll never use regular milk again. :)

The ones in the picture are served with a small amount of Nutella and Strawberry preserves.

I like them with just a little sugar sprinkled on them, but nutella, preserves with cream cheese, or fresh fruit work really well. You can also remove the sugar from the recipe and make savory crepes. With savory, I really like to fill them with a spinach, cheese, and mushroom mixture. :)

great recipe! learned to make crepes at an early age and this is the best recipe yet ;) i like how you do it old school like me in a regular pan.

My husband is French and he got me making them in a pan. I used to use those electric crepe makers, but for some reason they taste better if done in a pan. :)

Wayyyyyy better in a pan. My mom always made them paper thin, some people make them like pancakes. I just look at them and say, "No!"
